When I had tea at Ippodo Tea Shop's main store in Kyoto, the clerk specially recommended the special Gyokuro, which is only available at the Kyoto store, and taught me how to make it. The tea soup was so sweet that I was completely conquered. The brewing method is very important: 1. Prepare a pot and four cups, pour 100-degree hot water into the cup, and when the water moves to the third cup, put 10g of Gyokuro into the teapot, and then pour in water close to 60 degrees. 2. Wait for 60 seconds (only for special grade), and 90 seconds for others. During this time, the teapot must not be shaken. 3. Quickly pour the tea soup into the cup, and patiently pour until the last drop. 4. Slightly open the tea lid to dissipate heat. 5. The rest of the procedure is the same as before, because the tea leaves have been brewed, there is no need to wait any longer.
